KVS Operation

 

Description

 

The Kitchen Video System (KVS) displays order information to the kitchen which can be bumped, recalled and expedited as required. The following details the main KVS window and all of it's related functions.

 

To Be Considered

  2. KVS can be run in either Standard or Journal mode. For more information ...
  3. A KVS Pro version is now available and requires a licence to run. The standard version of KVS is available for free.

 


KVS

 

 

The screenshot above shows KVS configured to show 4 columns and 2 rows, making a total of 8 cells per page. The number of columns and rows can be configured in the KVS Settings form.

 

The header of each cell displays information relating to the order.  Information such as the clerk who performed the sale, time since the order was placed and the table number are all displayed in the header.

 

The left most cell which spans the height of both rows is the summary panel, which displays a summary of all the current order items in the KVS.  The summary panel can be configured to work in a number of ways in the KVS Settings form.

 

When an order is too large to be displayed in a single cell, the order will be split over multiple cells.  Such orders can easily be identified by the text Continued >>, which is displayed at the bottom of each cell that continues onto the next cell.

 

Toolbar

 

  • Exit - Select to exit. The following popup will appear:
     

 

  • Select Yes to exit and restart the KVS.
  • Hold the Shift key down and select Yes to exit the KVS without restarting.

 

  • Settings - Select to open the KVS Settings screen.
  • Bump - Select to remove the selected order or mark (strikethrough) the selected item from the KVS. Right click on the Bump button to remove all Orders currently displayed on the KVS. Note : To mark individual items as removed (strikethrough) ensure the Allow bump of Individual Items settings is selected.
  • Prep - Select to ensure the Preparation timer is started. Normally the Reporting Group that has the Item with the longest preparation time would be selected first and then the Prep button selected. Note : This button will only be displayed when either the Pass Cooking Time, Section Cooking Time or Section Journal KVS Type is selected.
  • Recall Bumped - Select to display a Recall Bumped screen, similar to the Recall Orders screen below, which allows for the selection and recall of previously bumped orders.
  • Hold - Select to place the selected order on hold. The held order will be removed from displaying on the KVS until it is recalled. The order timer also goes on hold until the order is recalled. Note : This is button is disabled when in Journal Mode. To hold an order when using Journal Mode make use of the Hold / Recall Sale POS Key at the SwiftPOS Touch terminal.
  • Recall Held - Select to display a the Recall Orders, which allows for the selection and recall of previously held orders. Note : This is button is disabled when in Journal Mode. To recall an order when using Journal Mode make use of the Hold / Recall Sale POS Key at the SwiftPOS Touch terminal.
  • Notes - Select to display a popup of the Notes / Allergens associated with the selected item.
     

 

  • Expedite - Select to move the selected Order to the front of the queue (that is, the first cell in in the KVS). If however Orders are required to be moved elsewhere in the queue, then the Prompt to Move/Expedite Order option will need to be selected to enable this. Once selected, a cell number can be entered in order to move the selected Order to that position in the queue.
  • Wait Time - Select to open the following prompt below to set the current average Wait time between an Order being placed and the Order being available. The Wait time would normally be determined and set by the Head Chef. Once set the Wait time will be displayed here if the Wait Time option is set to True for the same KVS.

  • << - Select to navigate to the previous page of orders. This button is only enabled when there are a previous pages to navigate to.
  • >> - Select to navigate to the previous next of orders. This button is only enabled when there are a next pages to navigate to.

 


Recalling Orders

When orders have been Bumped/Held, it is possible to recall them using the Recall Bumped/Held screen. To recall a Bumped/Held order, follow these instructions:

 

  1. Open the recall screen by pressing the B key on the keyboard (default mapping), selecting the Recall Bumped or Recall Held button in the toolbar or by selecting the Recall button on the bump box.
  2. Select the desired order either by selecting the order in the list or by navigating with the Up/Down arrow keys on the keyboard or bump box.  Note : Pro mode includes an automatic preview of the selected order.
  3. To recall the selected order, press the B key on the keyboard (default mapping) or click the Recall button in the toolbar or the bump box.

 


KVS PRO Section/Pass Setup and Operation

 

Description

 

The KVS PRO version enables the configuring of multiple KVS terminals to support the use of Section/Pass type operations in large kitchens. Below is an example of a Restaurant KVS setup where 3 KVS monitors have been installed.
 

  1. KVS 1 for the Pass.
  2. KVS 2 for the Section that prepares Mains. For example, Steak, Eye Fillets, T-bones, etc.
  3. KVS 3 for the Section that prepares Sides. For example, Salads, Fries, Vegetables, etc.

 

 


Send to KVS Only when Required

 

When there is a need to send orders to a KVS when the order includes specific items, as opposed to a run of the mill order. For example, Burgers ordered with a specific type of chicken needs to be sent to the KVS as opposed to a straight forward original Burger order. To implement this, follow the steps below:

 

  1. Create a non Instructional Category, for example, Send to KVS.
     

 

  1. Ensure the Original Burger Product is assigned to a Category that does not trigger the KVS.
  2. Create a PLU item and assign it to the Send to KVS Category created above. For example, Sub New York Schnitzel.
  3. In SwiftPOS KVS > Settings > KVS Settings > Select Categories > Kitchen Video Categories - Add the Send to KVS Category to the Selected Categories panel.
  4. In Keyboard Designer add a Product POS Key and assign it to the Sub New York Schnitzel PLU item. Also, ensure that the Forced Instruction option is selected in More Settings.
  5. Send a Full Update to the SwiftPOS Touch Terminal.
  6. Sell the Original Burger.
  7. Sell the Original Burger and then also the Sub New York Schnitzel.
  8. The result should be:
